Practice steps:
1. Pour glutinous rice flour into a large bowl, slowly add boiling water, and stir with chopsticks or spoons until dough is formed;
2. Take a small piece of dough, knead it into a small ball, squash it by hand, and wrap it in a proper amount of red bean paste;
3. Knead into a ball and put it on the chopping board;
4. Take out the three-color agates one by one and stick them on the surface of the dough;
5. After the pot is boiled with water, put the glutinous rice balls into the pot and cook until they float.
Tips:
1. In the process of kneading dough, pay attention to the fact that the temperature of water should not be too high, so as to avoid the sticky glutinous rice flour mixed with boiled water and difficult to form. It is suggested that the water temperature should be controlled at about 70℃.
2. Red bean paste stuffing can be made by yourself or purchased off-the-shelf. If you make it yourself, it is recommended to soak the red beans in advance, then boil them and stir them into red bean paste.
3. Don't take out the dumplings immediately after they are cooked. You can blanch them in cold water again to make them more elastic.
4. It should be noted that the three-color agate should not fall into the pot, otherwise it will easily destroy the shape and taste of the glutinous rice balls, so it needs to be patiently pasted to ensure the beauty and taste.
