How to make French orange crispy duck breast?
This dish is divided into three parts: duck meat, sauce, and side dishes.
Duck meat part: Cut the duck breast into a whole piece, make diamond-shaped patterns on the skin (be careful not to completely cut the skin), and sprinkle with pepper and salt.
Grate the orange peel into shreds and sprinkle it evenly on the duck meat. Put a little oil in the pan and fry the skin side down in a cold pan over medium heat (about 4 minutes, you can obviously see a lot of duck fat is fried) ), then turn it over, sprinkle with rosemary and garlic cloves, and continue to pour the fried duck meat on the other side.
Preheat the oven at 180 degrees hot air mode for 7-8 minutes. While roasting start making the sauce.
Sauce part: Cut the oranges previously, squeeze the juice into the remaining duck fat, cut the orange meat into pieces and throw it in, add salt, pepper, and honey (adjust the amount according to your own taste). Then beat it with a mixer to make a sauce.
After the duck meat is roasted, take it out and let it rest for 5 minutes (this is to allow the meat to absorb the juice back, so that it will be juicy inside). Then, to achieve a crispy effect, spray the skin with a spray gun.
