Vegetable oil has different characteristics because of different raw materials. Then, the advantages and disadvantages of seven common vegetable oils in life and suitable cooking methods are introduced.
1, soybean oil
As the name implies, soybean oil is an edible oil extracted from soybean, which is often called soybean salad oil. Usually, soybean oil is light yellow and looks clear and transparent without sediment. However, it should be noted that because soybean oil is rich in nutrients, the shelf life is relatively short, usually only one year, and the shelf life after opening is even shorter. In addition, in the process of long-term storage of refined soybean oil, the color of oil will gradually change from shallow to deep, which may be because the oil will slowly oxidize with time, so buy soybean oil as much as possible, and don't hoard it. Considering the low oil yield of soybean oil, the processing method of leaching is adopted, which is not as good as pressed oil in quality and has low cost, so soybean oil is generally cheaper than pressed oil. When cooking, soybean oil bubbles easily when heated, so it is not suitable for stir-frying, frying and frying.
2. Peanut oil
Peanut oil is rich in fragrance, the oil body is light yellow, and the color looks very clear. The dishes made from peanut oil are full of fragrance, popular in family cooking, and rich in nutrition. The ratio of saturated fatty acids to unsaturated fatty acids is about 1:4, and the content of carotene and various vitamins is not low, so it is a kind of edible oil with relatively balanced nutrition. Peanut oil can usually be divided into two types according to the production process: leaching peanut oil and pressing peanut oil. Peanut oil is rich in nutrients and more suitable for cooking. 3. Corn oil

Corn oil is rich in vitamins and unsaturated fatty acids, and its oil body is clear, transparent and fragrant. The dishes made from it are refreshing and delicious, and it is not easy to make people feel greasy. It is a recognized nutritious and healthy edible oil.

4. Rapeseed oil
Rapeseed oil is one of the traditional edible oils in China, with special flavor. Using rapeseed oil in traditional dishes can enrich the flavor and taste of dishes, and the oleic acid content of unsaturated fatty acids contained in rapeseed oil is second only to olive oil, and the cholesterol is very little or even negligible. It can be considered as a relatively healthy edible oil, but rapeseed oil also has some shortcomings, including high erucic acid, which is not suitable for people with "three highs".
Rapeseed oil has a slightly higher smoke point and better stability, which is suitable for many cooking methods. However, because rapeseed oil is slightly "green", it is not suitable for direct addition in cold salad, but it becomes "cooked oil" after heating, and the taste is very fragrant.
5, blending oil
Blended oil is edible oil prepared by two or more refined vegetable oils in a certain proportion. Usually, refined rapeseed oil, sunflower oil and soybean oil are the main ingredients, and the composition of nutrition and fatty acids is relatively balanced and comprehensive. However, the types and proportions of refined oil added to each blended oil are different. When purchasing, you should carefully observe the ingredient list and purchase according to your own needs.
Blended oil is basically suitable for all kinds of cooking methods, such as frying, frying, frying, frying or cold salad.
6. Olive oil
Olive oil is a kind of high-end oil in price. Unlike the above five kinds of edible oils, olive oil belongs to woody plant oil. It is a kind of edible oil that is directly cold-pressed with fresh olive melons. Because it does not undergo any heating and chemical treatment, most nutrients are preserved, so it is a very healthy edible oil. Olive oil is subdivided into virgin olive oil and refined olive oil.
Among them, virgin olive oil is rich in polyphenols, monounsaturated fatty acids, vitamins and other substances, which have antioxidant effect. Usually, the price is relatively high, so it is not suitable for cooking, and it is more suitable for stuffing or cold salad. The difference between refined olive oil and traditional vegetable oil is not very big, and the smoke point is relatively high. Although it is also suitable for cooking, it is expensive and low in cost performance.

7. Self-squeezing oil
Here, "self-extracting oil" is also listed separately, because it is very common. In life, people always think that there will be industrial additives in various brands of edible oil in supermarkets, so they prefer self-squeezed oil, thinking that self-squeezed oil is healthier and tastes better without additives, but this is really not the case.
Because there is no strict supervision on self-squeezed oil from raw materials to processing, and the processing environment needs to be improved, it is easily infected by bacteria, especially Aspergillus flavus, which can easily grow on peanuts, soybeans and other ingredients. Small workshops are unable to select ingredients. Long-term consumption of self-squeezed oil without quality assurance is not conducive to health, and self-squeezed oil is usually not refined, which contains many impurities, is usually deep in color, and is more prone to oxidation during storage, so it is generally not recommended.
Therefore, on the whole, rapeseed oil is the most fragrant.
