Step 2, moisten the filter paper
Put the filter paper into the filter cup, and simply wet the filter paper with hot water (the filtered hot water is thrown backwards), so that the coffee to be brewed next can retain its original flavor.
Step 3, add coffee powder.
Put the required amount of coffee powder by hand into the filter paper. It is generally considered that the grinding degree of coffee powder by hand is similar to the thickness of sugar. But in fact, the thickness of coffee powder depends on personal preference, and there is no certain criterion.
For beginners, take10g coffee powder as an example, and make it with about180ml. Then change on this basis until you find out your favorite proportion.
Step 4, water injection and stewing
"Bloom" (or "flowering"). It refers to the initial stage of hand-brewing coffee. First, a small amount of hot water (about twice the weight of coffee powder) is used to wet the ground coffee powder, in order to make the coffee powder bubble and expand.
The flushing method is to circle outward from the middle. At this time, the coffee powder will bulge into a hamburger shape and continuously discharge air. When the expansion ends and the shrinkage begins, it means that the steaming is complete.
Step 5, water injection
Secondary water injection
The "steaming" step has actually been counted as a water injection. Next, circle outward from the middle, slowly inject 100g water, and be careful not to make the water level exceed the edge of the coffee powder. At this stage, there will be a lot of foam, and the aroma will become stronger.
Three-stage injection
When the water level of the first stage of water injection drops to 1/2, the third stage of water injection can be started. Slowly inject water into the center, keep flowing, keep the water flow stable, make the large coffee roll up, and avoid sinking at the bottom of the filter paper to block it.
When the coffee is slowly filtered, a cup of hand-brewed coffee is also ready.
