Beans should be green or green-white, tightly wrapped by translucent seed coat (white film around seeds), squeezed by hand, and the juice will flow out. Stale edamame is often soaked in water. If the pod is yellow, fuzzy and easy to crack, the beans are peeled and separated from the seed coat, indicating that the beans are not suitable for fresh food.
