How to make Longjing shrimp

Take a cup and brew a small amount of Longjing tea. Let it sit for a few minutes; filter out most of the tea, leaving the tea leaves and a sip or two of tea for later use.

Cut open the back of the shrimp, remove the mud intestines, and clean the shrimp; rinse the shrimp under running water until the shrimp is tender. Jade white; drain the water; add an appropriate amount of salt and half an egg white, stir until it becomes sticky; add an appropriate amount of chicken essence and starch and stir evenly; marinate for about half an hour.

Heat oil in the pot (you can use more oil).

Tips
tips:
1. When frying, the speed should be fast to avoid the shrimp becoming old and unpalatable;
2 .Preferably use fresh live shrimp.
