Leave a little base oil in the pot, add chopped green onion and minced garlic, then add auricularia, pepper and carrot slices and continue to stir fry, stir fry the side dishes, then add fried yuba sections and stir fry a few times, add a little water, add salt, chicken essence, soy sauce and soy sauce to taste, stew for 2 minutes, stir fry evenly and then take out the pot and plate.

Sautéed Potato, Green Pepper and Eggplant

Disanxian is a special dish in Northeast China. The ingredients are potatoes, eggplant and green peppers. The finished dish tastes soft, fragrant and thick, and it is also a very good choice to mix rice.

Prepare ingredients: a potato, a long eggplant, a green pepper, a little chopped green onion, a little minced garlic, an appropriate amount of salt, two teaspoons of white sugar, two teaspoons of soy sauce, a little soy sauce and an appropriate amount of water starch.

1, potatoes are peeled and cut into small pieces after washing, and excess starch is washed away with clear water for later use; Wash, peel and cut long eggplant into hob blocks, and pat a layer of corn starch on the surface for later use; Wash the green pepper and break it into small pieces by hand.

2. Put the oil in the pot, the oil temperature is about 50% hot, put in the potato pieces, fry until the skin is golden and mature, and then remove it.

3. When the oil temperature rises to 60% heat, add the eggplant pieces, fry until the skin is golden, remove the oil control, and finally put the green pepper pieces into the oil pan for more than ten seconds.

4. Leave the bottom oil in the pot, add chopped green onion and minced garlic and stir fry until fragrant, then add fried potato, green pepper and eggplant and stir fry over high fire, add two teaspoons of white sugar, two teaspoons of soy sauce, a little salt and soy sauce, stir fry the seasoning evenly, then add a proper amount of water starch to thicken it, add a handful of minced garlic and stir fry it again for a few times.
