Differences in raw materials, brewing process, taste, etc.
1. Raw materials: Old wine uses grain as the main raw material, and rice wine uses rice, millet, black rice, corn, wheat, etc. as raw materials.
2. Brewing process: Laojiu is made using Daqu, Xiaoqu or bran koji, yeast and other saccharification starters, and is made through cooking, saccharification, fermentation, distillation and other processes. Rice wine is made by steaming, mixing with wheat koji, rice koji or medicinal wine, saccharification and fermentation.
3. Taste: The old wine has a mellow and rich taste with a long aftertaste. Yellow rice wine is divided into sweet and non-sweet types. Sweet rice wine tastes sweet and delicious, with a low concentration. Non-sweet rice wine tastes similar to ordinary red wine, with a bitter taste at first and then sweetness.
