Production steps
1. Wash the pork bones, pork bones, and chicken bones, put them into a pot, add an appropriate amount of water, boil over high heat, skim off the foam, and cook over medium-low heat for 2 hours.
2. Put the ginger slices, green onion segments, and garlic into the pot, add an appropriate amount of water, boil over high heat, skim off the foam, and cook over medium-low heat for 30 minutes.
3. In another pot, add an appropriate amount of oil, add dried chili peppers, peppercorns, star anise, cinnamon bark, and bay leaves, and stir-fry over low heat until fragrant.
4. Put the cooked bone broth and spices into the same pot, add an appropriate amount of salt, chicken essence, light soy sauce, dark soy sauce, vinegar, white pepper, and MSG, and cook over medium-low heat for 30 minutes.
5. Finally, filter the soup base to remove impurities, and it can be used to make hot and sour noodles.
Tips
1. Be sure to skim off the foam when cooking bone broth, otherwise it will affect the taste.
2. When cooking bone soup, the heat must be controlled well. If you cook it for a long time, the soup base will be cloudy, and if you cook it too little, it will have no flavor.
3. When seasoning, adjust according to your own taste and increase or decrease the amount of seasoning.
