Hui people distributed all over the country are divided into three kinds of raw materials: ordinary oil fragrance, sugar oil fragrance and meat oil fragrance. The taste is like "there are salty, light, sweet and fragrant fermented noodles, fragrant scalded noodles, and fragrant fermented noodles in the northwest Hui nationality". Southern Hui people in Quanzhou, Yangzhou and other places have glutinous rice and sweet potato. " Most Hui people's oil incense is round, but some in some areas are different. For example, the oil incense of Hui people in Langzhong, Sichuan Province is not round cake, but cylindrical, much like a cup-shaped cake.
Characteristics of oil-scented customs
(1) Don't ask the imam not to move the frying pan. In some areas, there is a saying among the Hui people that "don't ask the imam to move the oil pan". This is because in the customs of naming, circumcision, marriage, funeral and festivals of the Hui people, the imam often participates in various ceremonies as the host. Therefore, if any family is going to make oil incense, it must first invite the imam to go home to chant Buddhist scripture, and then move the oil pan.
(2) It must be halal and clean when making. Hui people are very particular about making oil incense, and the person in charge of the pot "washes big and small before frying to keep halal;" Generally, older and experienced people should hold the pot, light incense beside it, and say' Too Simi' before cooking. When frying, people who haven't been washed clean are forbidden to approach the pot head. In order to prevent people who haven't been washed clean from breaking into the house, a bowl of clear water should be placed next to the pot, which is intended to be clean. And "After the oil is fried, you should put your face on it."
Break and eat when eating. Hold the fried oil incense in your hand. "You should also keep your face up and eat it along the knife edge. You are forbidden to bite it." In some places, you can tear it in half by hand and bite it, but you are forbidden to eat it directly with the complete oil incense. This is also the characteristic of Hui people eating oil incense everywhere. In addition, the Hui people in the southern mountainous area of Ningxia are forbidden to eat while frying, and they should wait until the frying is over.
