1. Soaking: After buying the prawns, first put cold water in the basin, completely soak the prawns in it, and wait three or four hours before taking them out.
2. Filter water: After soaking for a few hours, use a slotted spoon to take out the shrimps, put them into a water pouring basin, and then remove the black lines on the backs of the shrimps one by one, and remove the prawns. Cut off the whiskers with scissors to prevent them from getting entangled during cooking.
3. Rinse: Put the packed prawns under clean water and rinse them continuously. Rinse them several times to clean the sand and soil on the shrimps, and then put them into the water basin and pour water.
4. Marinate: Put the watered prawns into a basin, put some cooking wine or white wine inside, sprinkle with some salt, and marinate for half an hour.
5. Cook: Put the marinated dried shrimps in a pot, fill the pot with a little water, be sure to add cold water instead of hot water, and add some salt foam and green onions inside. Wait for the seasonings and turn on the fire.
6. Check the heat: Bring the shrimp to a boil over high heat, then lower the heat and cook for a while. When the shrimp becomes bent and the whole body turns red, you can take it out and eat it.
