Method/steps

Cut potatoes into cubes, tear eggplant into strips, peel and slice tomatoes, slice peppers

Slice onions, ginger and garlic, cut coriander into small sections, and slice meat

Put oil into the pan. When it is 70% hot, add the meat.

Add onion, ginger, pepper and soy sauce

Add potatoes and eggplant

Saute for a few times, then add the water and tomatoes that have covered the vegetables.

After simmering for more than 10 minutes, add salt and pepper

Notes
Cut the potatoes into pieces and run them through water to remove the starch.
After simmering, it will taste more delicious with an appropriate amount of soup.
