Step one: make soup.

Boiling soup is the most important thing. Good soup should be boiled with more than two kinds of animal bones, usually pig bones, duck bones and eel bones, and the bones are slightly fleshy.

Moreover, chicken soup is generally no longer mixed with water, and the auxiliary materials for hanging flavor are onion, salt and pepper. In short, Yangchun noodles don't need chicken soup as the bottom, not the cost of raw materials, but the taste.

After the soup is boiled, can I put the noodles? The answer is: not yet ~ because I have to cut the soup.

Step 2: Cut the soup.

Cutting soup is to prepare the soup base, which requires three things: soy sauce, lard and garlic.

First, water and soy sauce are mixed together and boiled, and then the boiled mixture is mixed with the soup base according to the ratio of 1: 1, thus making the noodle soup with Yangchun noodles. The temperature of the soup must be hot enough, so put lard and sprinkle garlic to make it fragrant and make people's appetite open after smelling it ~

Step 3: Come forward.

Noodles can be cooked with ordinary raw noodles. Put them into 300ml of clean water (the amount is basically 2 people) and boil them for three times in a row to ensure that the noodles are cooked thoroughly.
