The fairy tofu is made from the leaves of the tofu faggot, a peculiar plant in the local mountains of Shichian, also known as the fairy tree.
The tofu faggot is a shrub belonging to the Verbenaceae family, and its scientific name is Guanyin grass. The fairy tree is quite important to the local Gelao people. In times of hard living, people would take the leaves of the fairy tree to fill their stomachs. Nowadays, when life is better, the leaves of the tree are taken by the locals and made into a summer delicacy, also known as fairy tofu.
