2. Cut the ginger and green onions into shreds and set aside.
3. Heat the base oil over medium-high heat. Pour the prawns in and stir-fry until they change color. Use a shovel to press the shrimp heads halfway through, so that red oil will come out. After the color changes, add the shrimps to the pot. Pour out all the oil and set aside.
4. In addition, heat the base oil, sauté the onion and ginger, turn to low heat, squeeze like tomato paste, stir-fry over low heat, don't burn it, then add sugar and appropriate amount of salt. The taste depends on you. If you like it sweeter, add more sugar. If you like it sour, add less sugar. You can try it yourself.
5. Pour half a bowl of water into the super good tomato sauce. After boiling, turn to high heat and pour all the shrimp and shrimp oil into the pot. Then stir-fry until the juice is reduced and serve on a plate.
