Raw chestnuts are shelled. There are many ways to peel chestnuts. I usually cut a hole one by one with a knife and put it in the microwave oven. After cutting, it can also be boiled in hot water for a while, and it is easy to peel. After boiling off the shell, the second step can be omitted.
Peel the naked chestnuts and boil them in water 1 for 2 minutes. If you just fry chestnuts with cooked sugar, you don't need to cook them.
Wash mushrooms, remove pedicels and soak them in warm water in advance.
Don't throw away the handle of the broken mushroom. I usually keep it for cooking simple broth. Very fresh. Of course, wash it carefully before cooking.
Cut the chicken wings in half and marinate them with 2 spoonfuls of cooking wine.
Prepare 2 slices of ginger, a few shallots, a few peppers, 1 dried peppers.
Heat the oil pan, fry the chestnuts first, and take them out for use.
Then pour into the chicken wings, add all the seasonings in step 6, and stir-fry until the surface of the chicken wings changes color.
Then put the soaked mushrooms and chestnuts together. Stir-fry and add 1 tbsp soy sauce, 2 tbsp soy sauce, 1/2 tbsp sugar.
Then pour in boiling water without ingredients. When the fire boils, turn to low heat and cover it. Boil for about 15-20 minutes, and then collect the juice on high fire. If it is not salty enough, add some salt. I think it's better to make the seasoning for Chinese food, taste it yourself and adjust it flexibly. Sprinkle some chopped green onion after cooking.
