How to make hot and sour noodles?
Cook the sweet potato vermicelli in hot water (don't cook it for too long, otherwise it will not be chewy), take it out (you can add a spoonful of the water used to cook the vermicelli) and set aside.

Tips
Sweet potato vermicelli will become stale after being cooked for a long time. Just boil the soaked vermicelli in hot water for about 3-5 minutes. Rinse without soaking and cook for about 8-10 minutes.
The vermicelli is not put in the oil pan. If you need to add green vegetables, just cook it with the vermicelli and take it out.
Boil the chili oil while stirring
Some people say there is too much oil. Don’t pour all the oil in. Add more oil and add more ingredients, leaving a spoon of water for cooking the vermicelli.
