Materials
Two pig's front feet, two medium sweet potatoes, one onion, 80 grams of roasted fins, one tablespoon of soy sauce, one tablespoon of cooking wine, five slices of ginger, half a section of green onion
How to do it
1. When you buy the pig's feet, ask the merchant to cut each one into six small pieces. Wash them, put them in a pot of cold water and rinse them with hot water. Carefully remove the remaining hairs from the top.
2. Put the pig's trotters into a pressure cooker, pour in about 2 centimeters of water that doesn't cover the pig's trotters, and add ginger, green onion, and cooking wine. Close the lid and cook on high heat until it squeaks, then close the sealing valve and press on low heat for 30-40 minutes. Turn off the heat and wait until the air in the pot runs clear, then fish out the pig's feet and drain.
3. Mix the soy sauce and barbecue sauce with the pig's feet and marinate in a plastic bag in the refrigerator overnight.
4. Before grilling the pig's trotters, wash and peel the sweet potatoes and cut into thick slices, slice the onion into wide strips, and mix with 30 grams of shark's fin soup.
5. Line a baking sheet with tinfoil, spread the sweet potatoes and onions first, then put the pig's feet. Bake at 220 degrees for 1 hour until the skin is browned.
