Why is Chinese food not big? (1)
This is a quite common phenomenon, which is accurate all over the world, even in Chinese mainland, the birthplace of Chinese food. This is also a very interesting phenomenon. It is universally acknowledged that Chinese food is delicious. However, up to now, there has not been a large-scale Chinese food group in the world, and the Chinese food industry is still in the initial stage of group disputes. In the foreseeable future, it is almost impossible to expect a catering giant like KFC and McDonald's. As a restaurant operator, I have been thinking about this issue. I have read a lot of articles in this field, but I always feel that although those articles are very reasonable, in some places, I always feel that they are not thorough enough or comprehensive enough. Therefore, I will put forward some personal views based on the experience and thinking of my insiders. One: Lack of reverence for food. China people are fearless and dare to do anything. At best, it's aggressive, but if you're not careful, it will become reckless and reckless. Foreigners, especially those advanced countries, although their people are much richer than us, rarely see them wasting food. They cherish every kind of food on their table and regard thrift as a virtue. Obviously, by contrast, Chinese people (especially the mainland, especially those who eat and drink with public funds) are particularly wasteful in eating. From the official to the folk, they are proud of eating and drinking, squandering and wasting, and are ashamed of being diligent and thrifty. The more leftovers there are at the banquet, it seems that the greater the owner's face, and it also seems that the owner has identity and money. These stupid habits are so harsh in our third world country, which has just got rid of poverty and its per capita income ranks one hundred away from the world. China, known as the country of delicious food, claims that all the organic substances in the world, such as those flying in the sky, crawling on the ground, swimming in the water, drilling in the soil, snakes, insects, rats and ants, can't be imported. For anything that can be eaten, it is simply all is forgiven, an animal, from beginning to end, from inside to outside, from excretory organs to reproductive organs, basically everything can be served on the Chinese table, making those foreign adults dumbfounded. Chinese eating habits, at best, can save resources and make full use of every meal. At worst, in the eyes of foreigners, they are uncivilized, eccentric and incomprehensible eating habits. * * * * * However, first of all, it must be pointed out that eating or not eating these things (such as pigs in the water) does not show who is more civilized and noble. The biggest problem is that some Chinese "elites" are willing to eat some animals' reproductive organs or brains, as well as those rare wild animals, and show many cruel, backward, horrible and barbaric practices in the process of eating. It's like knocking a hole in the monkey's head and eating the monkey's brain alive with a spoon; Or pour boiling oil on the donkey, scald it directly, and then cut it off with a knife to eat (live donkey); Put the newborn mouse cub in the oil alive and fry it (three replies); Put the live goose on the hot iron plate, let it keep jumping because it is hot, until the goose's feet are cooked, and then cut it off on the spot to eat. Although these people only account for a small part of 1.3 billion mainland Chinese and 5 million overseas Chinese, because most ordinary Chinese can't afford to eat these things even if they want to, the problem is that these people are precisely the "elite class" of Chinese, who have the greatest energy, power and money, the greediest mouth and the greatest influence. Their mouths make the world. This kind of bad behavior has greatly damaged the reputation of Chinese people, and naturally indirectly damaged the reputation of Chinese food, because Chinese food is their "accomplice." * * * * * * However, it must be pointed out that foreign adults can't fully accept Chinese food, and there are cultural reasons, which have nothing to do with whether Chinese people spoil food. Eating dog meat, for example, caused a lot of trouble a few years ago (especially during the World Cup in Korea and Japan and the Beijing Olympic Games). In the eyes of foreigners, dogs are friends of human beings and can't be eaten. However, Chinese (including Koreans) don't think so, so they can eat them. I don't think we need to sell ourselves short in this case alone, apart from other cases. Eating dog meat (although I personally don't eat it), in fact, I think it's nothing. As a domestic animal, some people are willing to take it as a pet, or as a friend, or even as a child and a parent, OK. Therefore, I personally think that whether to eat dogs or not, whether to eat dog meat or not, is just a conflict between culture and eating habits, and does not involve some essential things, dogs and pigs, sheep and sheep. Let foreign adults call if they want, just ignore them. However, we must be clear about one thing. Foreign adults object to our eating dogs, and foreign adults object to our eating rare animals such as tigers, pangolins and monkeys, and how to eat them. These are two different concepts. The former may have a little excuse for the clash of civilizations, but the latter can't be explained at all. We eat whatever animals are precious and rare. A food is the freshest and most delicious to eat by what method, regardless of whether this method is cruel or ignorant. In the final analysis, this still comes down to our Chinese (especially mainland Chinese) lack of awe of food, or rather, lack of awe of nature. As an animal, man can evolve and become the spirit of all things because he can get rid of animal instinct, respect and fear nature. You know, all our food is a gift from nature. Whenever we are faced with a variety of food, we should be thankful for it, because it is a gift from nature. For us, the products of nature are not what we want, but what we can eat and what we can't eat. In modern times with so many products, there must be some moral bottom line. Therefore, we should condemn the uncivilized and ignorant eating behavior of some Chinese, and for those concerned, I think they should repent and ask God (nature) for forgiveness. 2. Lack of confidence in human nature. To tell the truth, Chinese food is famous all over the world. No matter from any aspect of "color, fragrance, taste and nutrition", Chinese food is ahead of other countries in all directions. However, Chinese food has only been popular among Chinese cultural circles and western minorities, and it has never been able to reach the mainstream of the West. In my opinion, in the final analysis, it's not that westerners don't like Chinese food. On the contrary, they like Chinese food very much. But the problem is that they actually don't trust Chinese people who cook Chinese food from the bottom of their hearts. Chinese people are dishonest and have no rules and beliefs in their eyes. There is a very popular comedy "The Big Bang Theory" in America, and some plots in it vividly illustrate this phenomenon. Four of the leading men like western food very much, and often eat in a Chinese restaurant or order takeout food from this restaurant. However, every time he eats it, Sheldon has to ask again and again whether Liu Ding or orange diced is in one of his favorite dishes, because the name on the menu is Liu Ding, and he always suspects that the Chinese food boss is up to something and deceives customers by replacing Liu Ding with orange diced. However, as a foreigner, it is obviously impossible to tell whether these cooked things are Liu Ding or orange diced. Are these plots an unwarranted slander on Chinese food? Seeing these shots and laughing heartily, I can't help but feel embarrassed and ashamed in retrospect. I have to admit that as a restaurant operator and a person with a little knowledge of the inside story, this phenomenon is definitely not slander and rumor, but one of many ugly phenomena that do exist in the Chinese food industry. These phenomena are not individual cases, but absolutely very common. From barbecue stalls on the roadside, pork skewers are sold as mutton, to restaurants on a larger scale, and pork chops are sold as deer chops. In particular, some star-rated hotels sometimes buy fake shark's fin and bird's nest seriously. This kind of thing, countless, can't hide. To be honest, every time I hear such a case, emotionally speaking, I don't care much about the latter, regardless of the first two cases. Anyway, for those who can afford these things, whether they are true or not, they may not care too much. What they care about is the eating environment and who they eat with. Of course, even if they eat something wrong, they don't care. Anyway, these shark's fin nests are expensive and they don't need to spend their own money. However, speaking from my conscience and professional ethics, I am ashamed of my colleagues who cheat. From a purely technical point of view, with the "intelligence" of China people, in these crooked ways (especially food), our achievements (referring to Chinese in general) can almost be said to be the pinnacle, which is awesome all over the world. Now, we can almost make the fake ones exactly the same as the real ones, such as fake salted eggs, fake milk powder and fake bird's nest. Even people who often eat them can't tell the difference in taste and shape. It is said that some people in Guangdong now specialize in making fake shark's fin, just like making vermicelli. After adding some "patented" chemical additives, the fake shark's fin is almost exactly the same in shape, taste and taste (but frankly speaking, shark's fin itself has no special taste, and it is all enhanced by other accessories). No wonder there was once a friend who was invited to eat braised fish wings for the first time. It was very rare for a few hundred dollars each. After eating, the next day he talked to me about the feeling of eating shark fins: it was like eating a bowl of hard vermicelli, with a few pieces, but the braised juice inside was delicious, rich and long-lasting. By the next day, it seemed that there was still the smell of braised juice in the stomach.
