(1) and noodles. Like making handmade noodles, first put the wheat flour into a basin, add an appropriate amount of alkaline noodles, add water and stir, and knead into a hard dough.
(2) washing pulp. Wash the dough into a paste with water in a large pot or porcelain basin until something fibrous (or delicious) remains.
(3) Boil. Pour the washed batter into the pot. If the batter is too thin, let it settle for a while, properly remove the clear water from the upper layer, and then pour it into the pot to cook until it is thick and paste (of course, make sure to cook it first). The first three steps are the same as making bean jelly.
(4) the noodle fish forming step. Put the "well" frame on a basin or pot filled with cool and clean water, and put a leaky basin with a uniform round hole at the bottom in the middle (it can also be replaced with a leaky spoon with a larger hole). A larger spoon will scoop the cooked thick paste into the leaky basin, slide and squeeze it in the middle of the leaky basin and let it pass through the round hole, so that the smooth noodle fish will fall into clean water.
(5) Stir vinegar or syrup, stir-fry some side dishes, and prepare garlic and pepper.
(6) After the noodle fish is cooled, scoop it up with a colander, remove the water inside, pour it into a bowl, and add various prepared ingredients to make a bowl of cool, smooth and delicious noodle fish.
In the past, in Wuzhai county, kneading fish was scheduled for the fifteenth day of the seventh lunar month. According to legend, this is because in the Yuan Dynasty, in order to oppose the brutal rule of the rulers of the Yuan Dynasty, the masses spontaneously took noodle fish to deliver news, and by sending noodle fish, they began to kill Tatars on August 15th of the lunar calendar. There is also a local folk proverb: "Give the noodle fish on July 15th, and kill the Tartars on August 15th." This activity of kneading dough fish spread in Wuzhai. Today, the fifteenth day of the seventh lunar month has become the exhibition day of kneading dough and dough modeling in Wuzhai county, and it has become a unique folk activity of the local people. It has become a common custom to visit relatives and friends in Wuzhai County every year on the 15th day of the seventh lunar month, to give each other dough treasures, and to compete with each other in dough skills.
Squeezing fish with noodles is auspicious and festive. Wuzhai County, located on the east bank of the Yellow River, is kneaded into the shape of a fish with flour, which means "carp yue longmen", turning the tide into luck and achieving the goal of being a learned person.
