On July 14th, Huzhou Normal University's "Tiaoxi fishing secluded, rivers and harbors like forests" summer social practice investigation team of Huzhou and Fuzhen Canal culture came to Digang, and interviewed Secretary Zhang Jincai. The students had a deeper understanding of the local food in Digang and interviewed Digang.
Secretary Zhang Jincai said that Digang is a place rich in fishery resources, so the famous dishes here are all related to fish: fish balls, fish cakes, shredded eel, stone pot mandarin fish ... These traditional dishes are based on this land, benefiting from the rich fishery resources, and become people's snacks to big delicacies. However, the waste water brought by the rapidly developing industry has caused a lot of fish deaths in fish ponds many times, and even destroyed the nature and living environment, which makes people feel sad. Although this is a fast-developing era, we should not sacrifice the natural environment for the sake of development speed. We should know "Lucid waters and lush mountains are invaluable assets". Secretary Zhang Jincai also told the story of the founder of Chen Jiacai, a famous local cuisine. As the personal chef of Zhu Wulou, Chen Guofu's father-in-law, he loved this land and didn't board the plane to Taiwan Province. Chen Jiacai also flourished here. This feeling of loving hometown and motherland is worth learning by future generations.
The interview with Master Zhang not only made us understand the local pastry practices, but also caused us to think about inheritance and innovation. He said that as he grew up, he found that childhood food had lost its childhood flavor with the changes of the times, so he chose to become a pastry chef and pass on the memory of cakes to future generations. He not only inherited the classic pastry practice, but also combined with the local mulberry culture to innovate a variety of mulberry leaf foods. We need to inherit, but we can only become a porter if we inherit blindly, but we can't really become a craftsman.
