What is fried San Mao?
Many friends must look puzzled. What kind of food is this? I have never heard of it. After all, this kind of wild vegetable is not available all over the country. It is a unique wild vegetable in Yunnan and Guizhou.

Four ways to eat wild vegetables

1, cold salad

Cold salad is the simplest way to eat, including mixing raw water and then cold salad. Most wild vegetables have special tastes such as bitter taste, astringent taste and sour taste, so after picking, you should first blanch with boiling water and then rinse with clear water to remove the odor. Seasonings such as refined salt, sugar, monosodium glutamate, vinegar, sesame oil, pepper oil, minced garlic and coriander can be added to the cold salad according to personal taste. This is the best way to keep vitamins in wild vegetables.

2. Fried food

The method of frying wild vegetables is roughly the same as that of frying other vegetables every day. In order to prevent the vitamins in wild vegetables from being destroyed during cooking, stir fry quickly with urgent fire. If you are frying with meat, eggs and other ingredients, you can use the "double frying method", that is, stir-fry the ingredients with strong fire and hot oil respectively, stir-fry the wild vegetables with strong fire after taking out the pot, pour the ingredients back into the pot and stir them together, and immediately take out the pot and put them on the plate. Doing so can make the fried dishes full of color and flavor, and at the same time, it can better retain the nutritional value of raw materials.

3. Soup

Pour an appropriate amount of cooking oil into the pot, heat it, add chopped green onion or garlic, add water and a small amount of shrimp skin, pour wild vegetables after boiling, cover the pot, and take it out after 2-3 minutes. If wild vegetables are used as ingredients of other raw materials, they can be added 2~3 minutes before other raw materials are cooked. In this way, various delicious nutritious soups can be made, such as sliced pork soup with wild vegetables and bean curd soup with wild vegetables.

Step 4 make stuffing

Wild vegetables can be used as stuffing. Just chop up the wild vegetables and add other ingredients (the wild vegetables that are easy to produce soup can be wrapped in drawer cloth to squeeze out the juice inside), and then they can be made into various cakes, such as jiaozi, steamed buns and pies. If it's too much trouble to wrap jiaozi, you can also chop some wild vegetables and mix them directly with dry flour, add seasonings such as salt, monosodium glutamate and spiced powder, and steam them in a pot, so that Sophora japonica can be eaten. When filling with wild vegetables, in order not to waste vitamins and other nutrients, you can also make soup with squeezed vegetable juice.
