People in the Miao Village of Dong Township love to eat sour food. All kinds of pickled vegetables, sour soup, sour fish, and sour glutinous rice cakes. In addition to spicy food, it can be said that they are all sour.
There are many kinds of sauerkraut, including those made from radish leaves, those made from Chinese cabbage, and one particularly home-cooked one made from cabbage. Because it is convenient, all the villagers know how to make it! The sour and delicious cabbage is a great addition to rice. The pickled cabbage made by grandma is particularly delicious and I can eat several bowls of rice at a time.
Sometimes, when people are in a foreign country, they miss the vegetables and rice in their hometown. Even though it is not an elegant delicacy, in the hearts of tourists, the taste of hometown is very precious.
Young people can learn many traditional crafts. The so-called inheritance can start with the simple food of the people in their hometown!
Below I will share my method of making pickled cabbage. Every family has different cooking habits. Mine cannot be said to be 100% authentic. After improvements, the taste is almost as good as the original.
1/Prepare the cabbage
Choose Chinese cabbage, cut off the roots, tear off the bad outer leaves, and wash them.
2/Wash and pick slices
Tear off the cabbage piece by piece, or you can use a knife to cut it into strips according to your preference.
3/Pour boiling water
Boil a pot of boiling water and put the cabbage into the boiling water one by one. Be quick and don’t soak it for too long, otherwise it will soak in the future.
4/Place it in layers
Let the blanched dishes cool slightly and spread them layer by layer. You can use a large bowl or a clay pot. I I used a rice cooker liner.
5/Rub the rice water
Prepare the rice water, put the rice in a basin, collect the water and rub it until it turns milky white.
6/Filter the rice water
Filter the rice water separately and put it in a bowl for later use.
7/Pour the rice water into the cabbage
Sprinkle the rice water evenly on the cabbage. This process is the most interesting and really fun.
8/ Just soak the cabbage until it is full
It is estimated that the white rice washing water can be used to soak the cabbage completely. If it is soaked too much, the cabbage will easily become rotten.
9/Cover with plastic wrap
For insulation and sealing, you can add a layer of plastic wrap first.
10/Put it in a thermos bucket
If possible, put the prepared cabbage jar in a warm place. In the countryside, it is placed on the stove or beside a warm pot. My method is to put the hand cakes in a thermos bucket, which is just right.
It’s that simple, and you can have delicious pickled cabbage in a few days!
