When soaking sweet potato flour, you cannot soak it for too long, otherwise the gluten of the sweet potato flour will be lost. The best time is half an hour.
2. During the soaking process of sweet potato flour, we need to prepare a small cabbage. After breaking the prepared cabbage into slices, we also need to add some water to the cabbage, wash the cabbage twice with clean water, and wash it.

After cleaning the cabbage, we need to use a kitchen knife to separate the cabbage stems and cabbage leaves.

3. For cabbage stewed vermicelli, in addition to preparing cabbage and vermicelli, we also need to prepare a small piece of tofu. After preparing the tofu, wash the tofu clean, and then cut the tofu into small square pieces and set aside.
Next we need to prepare some ingredients, cut green onions into sections, slice garlic, shred ginger and set aside. You don’t need to prepare too much, just prepare a small amount.
Finally, prepare a few dried chili peppers. Wash the dried chili peppers and put them together with the ginger, onion, and garlic for later use.
Then prepare some pork. For pork, it is best to choose fat and lean pork belly. Today I am preparing lean pork. If there is pork belly, it is most suitable.

4. After the vermicelli is soaked, drain the soaked vermicelli and set aside.
Then we also need to prepare an appropriate amount of cooking oil. After heating it to 40% heat, add the prepared tofu cubes to the hot oil. Fry over low heat. After frying the tofu until both sides are golden, take out the fried tofu.
Set the pot aside.
Next, we need to prepare a casserole. After the casserole is heated, add a little cooking oil to the casserole. After the oil is hot, add the prepared ginger, onions, garlic, and dried chili peppers to the pot, and stir-fry until the aroma is released.
After the aroma of the spices is stir-fried, add the prepared pork to the pot, stir-fry the meat slices until milky white, and add the cabbage to the pot.
5. After frying the cabbage leaves over medium heat, add the cabbage leaves into the pot and continue to stir-fry until the cabbage is also fried, then add an appropriate amount of hot water to the pot.
You don't need to heat the hot water too much, just make it level with the cabbage. Then add a little salt, half a spoon of light soy sauce, a spoonful of dark soy sauce, a little oyster sauce, pepper, and white sugar to the pot and stir evenly.
Finally, we need to put the prepared vermicelli and tofu into the pot and stir-fry evenly, then cover the lid and let all the ingredients simmer in the pot for about 6 minutes. After the vermicelli and tofu are completely flavored, you can eat it.
