First, eight-treasure moon cakes. Babao moon cake is made of eight kinds of raw materials in a certain proportion. The main raw materials are: sugar, oil, cooked flour, cooked sesame seeds, nuts (peanuts, walnuts and sunflower seeds), dried tangerine peel and cinnamon powder, green shredded pork (or dried fruit) and white wine.
There are two kinds of skins: hard shell and crispy skin. Hard shell is made of wheat flour, water and oil in proportion. Pasta is made by mixing wheat flour, water and oil in a certain proportion, and then making flour paste. The cake is also made into corresponding small dosage by activating flour and oil. Then, wrap the cake in the batter, fold it again and roll it up, repeat it three or four times, then wrap the stuffing to make the cake, and bake it on the fire to make it slightly yellow up and down. The fillings are thick and thin. When freshly baked, it has a sweet and rich taste of dried tangerine peel and cinnamon. Take a bite and the sweetness of nuts and fruits is among them. This is the old smell of childhood, which is particularly attractive.
Second, jujube paste moon cakes. The stuffing is made of jujube paste, sesame seeds and white sugar. There are also two kinds of skins: hard shell and crispy skin. The practice is the same as that of Babao moon cake. The sweetness of jujube is mixed with the crispness of skin. I want another bite.
Three, flower moon cakes and durian moon cakes. The stuffing is made of rose, sugar and wine in proportion. Or durian pulp. The skin is crisp. Rose moon cakes are full of flowers, and durian pulp is memorable, crisp and delicious.
This is a common moon cake for Mid-Autumn Festival in northern Shaanxi. However, there are many kinds of moon cakes in markets all over the country, each with its own characteristics.
