How long to bake cupcakes in the oven
Use the upper and lower heat, 150 degrees, wet bath method, and bake for 60 minutes.

Usage In hot water, melt the butter.
After the butter is melted, sift the cake flour into the butter, cut with a rubber knife and mix evenly.
Add pure milk in two batches and mix evenly.
Add the egg liquid (5 egg yolks plus 1 whole egg) in two batches, and mix evenly by hand with a whisk.
Stir the egg yolk paste until smooth and flowing.
Add sugar to the egg whites (3 times) and beat.
Beat the meringue until it becomes wet foam (pull up the small curved hook).
Add one-third of the meringue into the egg yolk paste and mix gently.
Then pour the egg yolk paste into the remaining meringue, fold gently and mix evenly.
Pour the cake batter into a small paper cup (90% full), hold the paper cup with a metal tart mold, and pour hot water of about 60 degrees into the baking pan.
Bake in the middle and lower layers of the oven, with upper and lower heat, 150 degrees, wet bath method, for 60 minutes.
Tear off the carton to reveal a fluffy cake!
Note
Cake is baked at low temperature. Generally, the cake baked by the water bath method is moist, soft, smooth and delicious. The cake batter should be 9 minutes full (if no baking powder is added).
