There are two types of Sichuan cold noodles. One is Guangyuan cold noodles, commonly known as rice cold noodles. It is more difficult and requires higher tools. It is a high-paying top industry; the other is cold noodles outside Guangyuan, which is also available in Guangyuan.
Basically every household can make it, commonly known as Dan Cold Noodles.
According to legend, during the reign of Emperor Gaozong of the Tang Dynasty, Wu (Wu Zetian), the daughter of a warrior at the Ministry of Industry, was selected by Emperor Taizong of the Tang Dynasty as a talented person in the palace when she was 14 years old.
At that time, she had no choice but to leave her childhood sweetheart, Chang Jianfeng, because she could not obey his orders.
When Wu Meiniang was studying when she was young, she and Jian Feng often went to the river bend together. There was a shaved noodle shop at the river crossing. Every time they swam across the river and crossed the bay, they always went to the shaved noodle shop to have a bowl of noodles.
As a result, I became familiar with the shop owner, and often discussed the making of noodles while eating. After a period of time, I also had a deeper understanding of it.
Later, they thought it would be nice to eat cold noodles in summer.
So I experimented with the noodle shop chef and finally developed a soft, delicious, tough and non-stick rice cold noodle using rice milk.
Mei Niang and Jian Feng hugged each other happily. When the noodle shop master saw this scene, he joked to the young lovers: How about calling this noodle "Couple Rice Cold Noodles"? It happened to be Mei Niang's birthday again.
This is how Couple Rice Noodles was born.
From then on, it spread and became a famous local food loved by local people.
Later, Mei Niang went to Chang'an, the capital.
Although she and Chang Jianfeng never got married, the couple's rice noodles were passed down.
Later, when Wu Meiniang became the empress, she still remembered the "couple's rice cold noodles". Every birthday, she would order the imperial chef to cook a bowl for her. In this way, until her death, the queen's steamed cold noodles were still widely eaten in Guangyuan, Sichuan.
It is edible, but in other places, it is almost difficult to eat authentic Queen's Steamed Cold Noodles.
Guangyuan cold noodles, also known as steamed cold noodles, are a specialty of Guangyuan City, Sichuan Province.
It is only produced in Guangyuan City and several surrounding counties and towns. Its taste gradually decreases with the distance from Shizhong District. Its appearance is similar to Shaanxi Liangpi, but its raw material is rice instead of flour.
Spread a layer of cloth and steam for 5-8 minutes. After steaming, pour it onto a table with sesame oil or vegetable oil.
After cooling, fold and cut into 1 cm wide thin strips with a knife. This kind of cold noodles is chewy and refreshing, and can be eaten in various ways. The most common way to eat it is: put the cold noodles in a bowl, add soy sauce, red oil spicy (dense)
, vinegar (a little), salt, MSG, garlic water (chop the garlic, then add water), Sichuan peppercorns, cooked oil (refined from clear oil, it depends on your taste. If you don’t want red oil and spicy food, add cooked oil),
Finally, you can add leeks, bean sprouts, celery, peanuts, mustard, etc. (usually add bean sprouts) depending on your taste.
After stirring, it has five flavors: sour, sweet, numb, spicy and fragrant.
Full of Sichuan flavor.
The taste is creamy and refreshing.
Can be eaten hot or cold.
Each has its own flavor.
As the saying goes, "Cold noodles are better than Jianmen Pass."
It further illustrates the magic of Guangyuan Rice Cold Noodles.
Without the soil and water of Guangyuan, the taste of Guangyuan cold noodles cannot be produced anywhere.
Someone once tried it outside Guangyuan City, but the taste was extremely poor. After several tests, no one dared to mention making cold noodles outside Guangyuan City, and it became a specialty of Guangyuan.
In Guangyuan, eating cold noodles in the morning has become a lifestyle habit for most people.
