Ingredients: 300g strawberry, 150g glutinous rice flour, 30g corn starch, 20g custard powder, 30g sugar, 250g water.
Accessories: appropriate amount of shredded coconut.
How to make strawberry daifuku:
1. Fresh strawberries, choose ones of about the same size.
2. Use a large bowl to weigh all the ingredients except strawberry and coconut, and mix thoroughly.
3. Put it in the microwave oven and simmer it on high heat for 2 minutes, take it out and stir it again, and simmer it for another 2 minutes.
4. Take it out and stir it for a final 2 minutes until it is completely cooked as shown in the picture.
5. Pour some salad oil into a clean plastic bag.
6. Place the dough on the oily side and roll it back and forth with a rolling pin until the dough is elastic.
7. Roll out the dough.
8. Roll the dough into long strips and cut into even pieces.
9. Use your thumb to press the middle of the small dough and add strawberries to wrap it up.
10. Wrap the rolled coconut and do the rest in sequence.
11. Finished product.
