Noodles with scallion oil and soy sauce
Ingredients: 90g of shallots, 6 tablespoons of soy sauce, 2 tablespoons of soy sauce, 0/0g of sugar13g of shrimp skin13g, 50g of vegetable oil and a little of cooked white sesame seeds.
Fresh noodles: 400g of medium gluten flour, egg 1 piece, clear water105g, and 3g of salt.
Production process:
Step 1: Make noodles first. I like to make my own noodles. I can also directly use the noodles I bought without additives. Put all the ingredients for noodles in a large bowl.
Step 2: Stir the ingredients evenly with chopsticks until they are flocculent as shown in the figure. Don't add too much water to noodles. It's best to make the dough harder so that the extruded noodles won't stick together.
Step 3: Knead the flour dough together by hand. It doesn't matter if it looks loose. Knead the dough as much as possible and gently press it with a dough stick to make it smooth and convenient.
Step 4: Put the dough into a dough press, press it repeatedly for several times until the dough is smooth and uniform, and finally press it into a thin sheet with a thickness of about 1 mm for later use.
Step 5: put it into a noodle mold and press it into noodles, and the thickness of the noodles is selected according to your own preferences.
Step 6: After all the noodles are pressed, sprinkle some flour and shake it to prevent adhesion. Fresh noodles are cooked twice each time, and half of them are refrigerated in the refrigerator.
Step 7: Prepare scallion oil. As the required ingredients, green onions are the first choice, fried green onions taste better, followed by thinner green onions.
Step 8: Clean the shallots, dry the water, separate the shallots from the onion leaves, just use the onion leaves, and cut the onion leaves into small pieces for use.
Step 9: Take a small bowl, put the soy sauce, soy sauce and sugar together, and stir well until the sugar melts.
Step 10: Pour the vegetable oil into the pot and start heating on medium heat. When it is 50% hot, add onion leaves and fry slowly with low heat. I cook a lot of onion oil. Put the extra scallion oil in the refrigerator and cook the noodles directly. Just mix well next time. If you only eat once, reduce the amount.
Step 11: slowly fry onion leaves until brown, and remove them with a colander to drain the oil for later use.
Step 12: Put the shrimp skin into a filter spoon, fry it in hot oil until golden brown, and take it out for later use. The extra fried shrimp skin is delicious. Don't miss it.
Step 13: pour that mix soy sauce and soy sauce into hot oil, stir quickly with a spoon to mix the vegetable oil and soy sauce, turn off the fire when the oil temperature boils, continue stir for 2-3 minutes, and wait for the oil temperature to cool down.
Step 14: add water to the pot to boil, and add noodles to cook.
Step 15: Put the fished noodles into a pan fried with onion, sprinkle with onion leaves, sesame seeds and shrimp skin, and mix well together.
Step 16: Noodles with scallion oil are ready. The aroma is attractive. A little girl can eat two bowls, do you believe it?
Tips:
1, it is best to dry or dry the water after cleaning the shallots, otherwise the water will splash when it touches the oil when cooking, so as to avoid scalding.
2, noodles can also be used to buy dry noodles, cooked and mixed with onion oil.
3, onion oil can be made more at a time, stored in the refrigerator, and directly mixed with noodles when eating.
