Authentic Guizhou glutinous rice cake peppers are best made from dried safflower creek peppers that are spicy but not strong and have a rich aroma. You can also use Zunyi peppers that are both spicy and fragrant. It is better to mix the two peppers in a certain proportion.
2. Processing:
Cut off the stems of the selected dry red peppers, shake off the pepper seeds (you can also keep the seeds), wash them and soak them in water for several hours. , if you need it in a hurry, you can soak it in hot water, or boil the peppers directly in water. In short, you need to make the peppers completely swollen and fleshy when pinched. Only such peppers can be used to make glutinous rice cake peppers.
3. Steaming:
Take out the fully swollen peppers, drain the water, put them in a steamer and steam them over high heat for about 1 hour, until they are easily torn apart. Becoming two halves is enough to qualify. Steamed chili peppers can maximize their color, spiciness and aroma when stir-frying the base. However, Guizhou glutinous rice cake peppers are usually not steamed, while glutinous rice cake peppers specially used for Sichuan and Chongqing hot pot must be steamed. It is up to you whether you want to steam them or not.

Method 2: How to make fresh chili rice cake and chili pepper
Ingredients:
500 grams of fresh green chili pepper or red chili pepper, garlic cloves, rapeseed oil, chicken essence, Appropriate amount of peppercorns and salt.
Preparation:
Remove the stems of fresh peppers, wash them and dry them.
Steps:
1. Put the peppers in a pot and slowly fry them over low heat without adding any oil.
2. Pour a small amount of rapeseed oil into the pot, stir-fry over medium heat until the pepper skin wrinkles and turns brown, add salt and stir-fry evenly, then remove from the pot.
