When I don’t know what to cook, I’ll make a big pot of braised noodles.
There were vegetables, meat and rice, and the aroma was overflowing. The family members were very considerate, and everyone had a big bowl. In the end, even the bottom of the pot was scraped clean.
Today I will introduce to you a potato and ham braised noodles. The ingredients are very simple and the cooking is also very easy. There is no technical content and even a novice in the kitchen can make it delicious.
Peel the potatoes and cut into small pieces, and cut the ham into large dices.
Put a little more oil in the pan (one-half more than you normally use for stir-frying).
When it is 70% hot, add the potatoes and fry slowly over low heat until the surface of the potatoes is hard and slightly burnt.
Push the potatoes to one side of the pot, add the onion, ginger and garlic to the other side, stir-fry until fragrant, add the diced ham, and stir-fry evenly.
Add light soy sauce, dark soy sauce, oyster sauce, salt, and five-spice powder to taste. Add a bowl of water just enough to cover the potatoes, cover the pot, and bring to a boil over medium heat.
Be sure to add enough water at one time, because potatoes have a high starch content, so avoid scorching the bottom of the pot during the simmering process.
During this period, we can process the noodles. The fresh noodles we bought can be grasped with our hands to make them thinner, and then pulled into long and moderate lengths for easy consumption.
Pour a spoonful of oil and stir evenly to coat each noodle with oil. This will prevent the noodles from sticking into clumps during steaming.
Spread the noodles evenly on top of the potatoes, turn to medium-low heat, cover and simmer for 15 minutes.
Don't leave people alone during this period. If you can't hold the amount of water, you can use a shovel to scoop it from the bottom. If there is a sticking feeling, it means the water is dry. If the noodles are not cooked, add some more hot water along the wall of the pot.
Be careful not to pour it on the surface.
Lift the lid of the pot, sprinkle some minced garlic and chopped green onion, add a few drops of sesame oil, turn it up and down with chopsticks, and stir evenly.
The potatoes are soft and glutinous and melt in your mouth, and the noodles also absorb the rich aroma of the soup, making them extremely delicious.
Although the recipe is simple, it is a delicacy that everyone loves.
There is nothing wrong with eating as much as you want, except that you will gain weight if you eat too much.
