The scientific name of this wild shrub is "six-winged tree". In Yunxi, there is a legend about "immortal tofu": in ancient times, there was a natural disaster and no crops were harvested. A man named Wang Sheng, inspired by the immortal, led the villagers to collect the leaves of "bipedal hexapod" on the mountain, and then pounded them into "tofu" to eat. In this way, everyone spent the spring drought with this "tofu". Because this kind of "tofu" is made by immortals, the villagers call it "fairy tofu" and the leaves that make "fairy tofu" are called "fairy leaves". After that, "immortal tofu" became the life-saving food for farmers in mountainous areas to spend the famine years. With such good living conditions, the "immortal tofu", which once survived by famine, has become a special food in northwest Hubei.
The practice of "fairy tofu" is very simple. The collected exotic leaves are washed, dried in the sun, scalded with boiling water in a pot, then repeatedly rubbed and mashed with both hands until the leaves become paste, then filtered into the pot with a cloth bag, and cooled to become "tofu". Then cut it into small pieces with a blade and pour it with pepper, vinegar and garlic, and it becomes a delicious dish. It tastes cool and refreshing, and it is an excellent food to cool off the heat in hot weather.
