Ingredients: 400 grams of beans.
Seasoning: 1/2 teaspoon of salt, a little MSG, 2 slices of ginger, 1 head of garlic, 30 peppercorns, 5 dried chili peppers, 2 tablespoons of vegetable oil, 2 teaspoons of shrimp roe soy sauce.
Method: 1. Prepare the ingredients.
2. Do not pick the beans yet. Soak them in clean water for 7 to 8 minutes. Change the water and clean them. Then pick small pieces of 6 to 7 centimeters of the same size.
3. Pour more oil into the pot than usual for cooking, and add peppercorns and saute until fragrant.
4. Remove the peppercorns, flatten the garlic and throw it into the pot to sauté until fragrant, then quickly add the beans.
5. Add half a spoonful of salt, stir-fry the dried chili segments, and two spoons of shrimp roe soy sauce. Stir evenly, cover the pot, and turn to low heat.
6. Stir-fry a few times until the water in the beans is dry and the skin shrinks.
7. Finally, add minced ginger to enhance the flavor, stir-fry a few times, stir-fry the beans thoroughly, add a little MSG, stir-fry evenly, and turn off the heat.
