Practice of Stewing Pig's trotters with Soybean
1. Prepare the ingredients used, wash the pig's trotters, scrape the pig's hair clean, cut into pieces with a width of 3 cm, soak them in clear water for more than 2 hours, and change the water halfway.
2. Soak soybeans for half a day in advance and prepare seasonings (dried peppers, cinnamon, fragrant leaves and star anise).
3. Cut the onion into sections, slice the ginger, put cold water in the pot, and add the washed trotters.
4. Blanch for 2-3 minutes, then rinse and drain; Add vegetable oil to the pot, and when the oil is hot, add ginger slices, onion segments, star anise, cinnamon, dried pepper and fragrant leaves and stir fry.
5. Add trotters and stir fry until slightly yellow. Add soy sauce, cooking wine and rock sugar and stir-fry until the color is the highest.
6. Boil the trotters with water, turn to low heat, cover the pot and stew for 40 minutes.
7. Add salt and soaked soybeans and continue to stew for 40 minutes.
