How to make Jade Cabbage Dumplings
Ingredients?
600g flour
250g spinach
200g leeks < /p>
Pork 300g
Salt to taste
Pepper 2g
Sesame oil 3g
Onion and ginger water 15g
How to make jade cabbage dumplings?
Wash the spinach and blanch it in boiling water for about a minute, take it out and cool it, cut it into sections, put it in a food processor, add a small amount of water and squeeze it into juice. Use a strainer to filter the spinach juice; don't just remove the juice. Add spinach juice to 300g of flour and mix to form a smooth dough; add another 300g of flour to water and mix to form a white smooth dough. Wake up for about 20 minutes each.
Wash and chop the leeks, mince the pork, add pepper, green onion and ginger water, sesame oil and salt and mix, stir clockwise evenly.
Two-color dumpling wrapper method 1: Knead the risen dough until it is smooth again. Roll out the green dough into a large piece, just enough to cover the white dough.
Roll the white dough into strips and place it on top of the green dough. Roll up the green dough to cover the long white strips. Cut off the excess green at the end of the roll, and seal the ends at both ends.
Cut the rolled strips into equal portions.
Roll the small pieces into round wrappers.
Two-color dumpling wrapper method 2: Roll out a piece of green dumpling wrapper.
Put out a small round piece of dough in the center of the dumpling wrapper.
Put a small white round dough in the center of the dumpling wrapper, which is slightly larger than the green dough just dug out. Flatten the white dough and roll it out evenly so that it is tightly sewn with the green dough. The two-color dumpling wrappers are ready.
The wrapping method is: put the dumpling skin into five equal parts and pinch them.
Use your thumb and index finger to pinch the edges into a pentagonal shape.
Gently hold the white and green interface of the dumpling with the tiger's mouth of your left hand, and pinch the five edges into the shape of a cabbage leaf with your right hand
Then pull the five leaves toward the same direction. Push in one direction. Use a toothpick to press out the texture of each leaf.
Cut the carrots into slices, stick some dry flour on the bottom of the cabbage dumplings and place them on top of the carrot slices.
The green cabbage dumplings are ready.
Tips
1 If you want to make steamed dumplings, use boiling water to knead the noodles;
2 Don’t put too much filling when making them for the first time.
