Eggplant with minced meat is one of my favorite dishes. I often make it at home, and the method is also very simple. I will share with you my method below.
Ingredients: eggplant, meat, ginger, garlic, red pepper, salt, light soy sauce, dark soy sauce, cooking wine, bean paste, starch, chopped green onion
1. Cut the eggplant into strips Shape or block, soak in water. For eggplants with thick skin, you can peel them first. I like to eat eggplants with thin skin and bright colors.
2. Cut the meat into minced meat, marinate it with cooking wine, salt and light soy sauce for a while, cut the ginger and garlic into minced pieces, chop the red pepper and set aside
3. Put oil in the pot , put more, after the oil is hot, put the ginger and garlic in and stir-fry until fragrant, then add the minced meat and stir-fry until the minced meat turns white, add the eggplant, add light soy sauce, dark soy sauce, bean paste and stir-fry for a while, put it in the pot Add water to cover the ingredients, cook until the water dries up, add red pepper and stir-fry
5. Add water, starch and gravy for a while and serve. Sprinkle with chopped green onion after serving.
You can use pork belly or pure lean meat. Pork belly produces more oil. I don’t eat fatty meat, so I just use pure lean meat. For those who like to eat fatty meat, it is better to use pork belly. .
