Steps to make fried green-headed mushrooms
1. When buying green-headed mushrooms from the market, choose small mushrooms that are not fully opened. I bought them for 80 Yuan per kilogram. (You can also eat the fully opened ones, but the taste is not as crispy and sweet as Duduoduo. The fully opened ones are 25 yuan per kilogram)
2. Use a knife to remove the soil on the mycorrhizae, and soak it in water for a while. Wash off the dirt with a brush. I don’t have a special brush, so I use an old toothbrush.
3. Remove the stems of green peppers, wash them, and slice them. Peel the garlic, wash it, and slice it.
4. Heat oil in a pan, add green pepper first, stir-fry for a while and then add garlic slices. Note that in order to achieve a good garlic aroma, put the garlic in two times, and only add half of the total amount of oil for frying here.

8. When the soup thickens, add some salt. Remember...not salty. (If you want to drink soup, the method is very simple, that is, in step 6, add more water (^_^)

Tips
1. There is no need to add MSG and other seasonings to enhance the flavor. The green head mushroom itself has a fresh and sweet taste.
