1. Ingredients: 500g lamb leg, 100g green garlic, 50g coriander, 2 green onions, 40 ml vegetable oil, 1/3 spoon salt, 1 spoon light soy sauce, 1 spoon salt and pepper, 1 spoon dark soy sauce, 1 tablespoon cooking wine.
2. Method: Choose fresh lamb leg meat, clean it and drain off the water. Cut the mutton into slices as thin as possible so that it can be fried and cooked quickly, and the taste will be tender.
3. Add cornstarch, cooking wine, salt and black pepper to the mutton. After mixing evenly, add some vegetable oil, mix well and marinate for 5 minutes. Arrange and clean the green garlic, onions and coriander. Cut the coriander and garlic into small pieces. Prepare chopped green onions and shredded ginger. Heat the vegetable oil in the pot, add the marinated mutton and stir-fry until it turns white.
4. Add chopped green onion and shredded ginger and stir-fry until fragrant. Add salt and pepper, light soy sauce, and dark soy sauce and stir-fry evenly, then take out the mutton. Leave some oil in the pot, add garlic and stir-fry. Pour in the fried mutton and stir-fry evenly. Add coriander and stir-fry evenly. Take it out of the pan and put it on a plate so that the fried mutton is tender.
