Ingredients:

80g unsalted butter, 180g cake flour, 30g sugar (powdered sugar can also be used), 40 grams of raisins, 20 grams of milk powder, 3 egg yolks (reserve one to brush the surface).

Method:

1. Soften the butter at room temperature.

2. Add sugar to the butter and beat with a whisk until the volume becomes white.

3. Add the egg yolk liquid in batches and stir, hitting the key point (each time you add the egg liquid, you must add the butter paste and the egg yolk liquid before adding it) until it becomes a fine paste.

4. Sift in the flour and milk powder, mix evenly with a spatula, then knead into a ball with your hands, finally add raisins and continue kneading.

5. Cover it with plastic wrap or a plastic bag and put it in the refrigerator for about 15 minutes before taking it out.

6. Use a rolling pin to shape into a square shape and cut into small squares.

7. Line a baking sheet with oiled paper, place the cut squares on the baking sheet one by one, and brush the surface with egg yolk liquid.

8. Preheat the oven for 10 minutes in advance and bake at 210 degrees for 30 minutes.
