3. Introduction to Pingle's unique skill "Eighteen Brews". To explain, brewing is stuffing.
Tofu, snails and other main ingredients are either stuffed, sandwiched, coated or rolled, and then heated into a dish.
You can try this method on everything in Leping, and stuffed rice has developed into snail stuffed stuffing, bean sprout stuffed stuffing, pomelo stuffed stuffing and so on.
In Pingle, there is really no food but no food, no table, no food.
The stuffing is mainly meat filling, mostly minced meat and mushrooms.
The most famous dish in Pingle is called pomelo peel stuffing, which is made from locally produced Shatin pomelo peel.
The key to pomelo peel stuffing is the processing of the pomelo peel.
First, peel off the green peel of the grapefruit with a knife, leaving the white sponge-like inner layer, then boil it in water, take it out after the water boils, soak it in cold water for 3-4 hours, and then squeeze out the bitter water in the grapefruit peel.
Soak in fresh water again.
Repeat this step 7-8 times until the squeezed water becomes colorless and transparent.
Squeeze the water from the pomelo peel, cut it into a square or triangle about 6 cm wide, make a slit in the middle, fill in the mixed stuffing, smooth it out, and the pomelo peel stuffing is done.

The aroma of the pomelo peel itself blends with the flavor of the filling. This dish is deeply loved by Pingle people.
Field snail brew is also one of the "Eighteen Brews".
First put the purchased snails into clean water and raise them for 2-3 days to make them vomit out all the sediment in their belly.
Wash the snails and put them in a pot to cook. Then take out the snail meat, chop it with pork, mint, etc., season well, and stuff it into the snail shells.
Heat the oil pan, add sour chili peppers and sour bamboo shoots and stir-fry. Pour the stuffed snails into the pan and stir-fry for 1-2 minutes. Add water and simmer for about 15 minutes, then remove from the pan and plate.
Stuffed bean sprouts is the most time-consuming and labor-intensive dish among the "Eighteen Stuffed Bean Sprouts".
There are two ways to do it: one is to use an embroidery needle to hollow out the bean sprouts vertically, then fill them with minced chicken stuffing, and then stir-fry them with chicken oil.
The second is to take fresh bean sprouts and boil them in water until soft, take them out, arrange about 20 of them, tie the two ends with a leek, then stuff the minced meat stuffing through the cracks of the bean sprouts, put it in the soup pot and cook it.
