1. Zhijin cake
Zhijin cake is a special delicacy in Zhijin County, Bijie City, Guizhou Province. Zhijin cake is famous far and wide, produced in "Jiu Duitou" (a place name) in Zhijin County; the glutinous rice is refined and fermented, and can be enjoyed after steaming; it is as white as clouds, as soft as sponge, with a sweet and refreshing fragrance in the mouth, and endless aftertaste.
2. Homemade smoked bacon from Zhijin Farm
Guizhou Zhijin’s bacon, sausage and blood tofu series of cured meats are from the Qing Dynasty’s Ministry of War, Governor-General Prince Shaobao Ding Baozhen’s hometown opposite the imperial palace tribute. The food is both fat and thin, not greasy, delicious, fragrant and refreshing. It is one of the local specialties well-known throughout the country. The bacon is loyal to the tradition, with exquisite materials, fine processing and high quality.
3. Blood tofu
Guizhou Zhijin’s specialty blood tofu and other series of cured meat foods were tributes to the palace from the hometown of Prince Shaobao Ding Baozhen, the governor-general of the Ministry of War in the Qing Dynasty. Every year during the twelfth lunar month, the food is fat and thin but not greasy. It is delicious, fragrant and refreshing. It is one of the local specialties well-known throughout the country.
4. Zhijin Gongbao Chicken
Kongbao Chicken has been popular for more than 100 years. Its founder, Ding Baozhen, was from Pingyuan (now Zhijin County), Guizhou. Ding was full of creative spirit. He passed the Jinshi examination in the third year of Xianfeng in the Qing Dynasty (1853 AD) and became governor of Shandong and governor of Sichuan. Because of his meritorious service in resisting foreign enemies in the southwest border, he was awarded the title of Prince Shaobao by the imperial court. According to the customary name of the Qing Dynasty, Prince Shaobao was also called "Gongbao", so everyone at that time called him Gongbao.
5. Zhijin bamboo fungus
Zhijin bamboo fungus is a specialty of Zhijin County, Guizhou Province, and a national geographical indication product of China. Zhijin County is the origin of the fragrant red bamboo fungus and is known as the "Hometown of Chinese Dictyophora". These strict requirements for climate and soil conditions of Zhijin Bamboo Fungus are due to the Guizhou Plateau climate of its place of origin, which has no severe cold in winter, no harsh summer, and is foggy and rainy.
