Divide into two 8-ounce patties. The patties must be formed in the same direction as the grinding. So when you make the patties, they're all vertical, which makes the burger more tender. Do not handle the meat with your hands.

We like to rub it with dalmation rub (2/5 pepper, 2/5 salt, 1/5 garlic powder). Cover the patties as you would your own children—it takes a deft hand to get the best out of them.

Each burger is cooked at grill temperatures of 550-600 degrees for no more than two minutes per side.

Turn on the heat. Then place a slice of Tillamook Colby Jack cheese on each patty. Top each patty with a slice of good quality American cheese (yes, the processed stuff).

Put them on the grill, turn off the heat, leave the grill off for a minute, and have a beer. You are about to create a miracle.

Place a patty on potato bread that is toasted brown but not black.

Covered Charred Onions - We use walla walla sugar and slow cook them on cast iron until they are crispy, dark in places and delicious.

Add two to three pickle spears.

Our secret sauce: mayonnaise, ketchup, Worcestershire sauce, Korean chili powder, celery salt, rice wine vinegar.

Place the next burger on top, exactly in the balanced position. Sometimes in the middle, sometimes on the side.

On the top bun, we put a little ketchup, mustard, no secret sauce anymore, lettuce and press it down lightly.

If done right, this baby will provide you with shade from the sun and nutrition to sustain you throughout the day.
