Table culture Shandong people are known to be good at drinking.
But as a Shandong native, I have been wandering around the wine table for more than ten years, and I have discovered that Shandong people are actually not as good as Mongolians in terms of drinking capacity, and not as violent as Northeasterners in terms of drinking intensity.
However, Shandong people have many customs and etiquettes at the wine table, as well as many ways to drink.
These things are a mixture of good and bad, some enhance the atmosphere, and some make people dislike them. Let me tell you a few things here.
Let’s take a seat first.
Shandong has been a country of etiquette since ancient times, so the distinction between guest and host, elder and younger at the wine table cannot be careless.
On the wine table, usually the person facing the door is the owner or host (the person who pays for the meal). The person on the wine table is sometimes jokingly called the "host"; the person opposite him is the person who comes to entertain the guests with the host, and is called the "host".
accompany".
The names of these two positions are slightly different in different places, but the meanings are similar.
If friends from other places can’t figure out the reason, I’ll tell you a simple way: you can tell it by just looking at the way the napkins are folded in the cups on the table.
The folding methods of napkins in these two positions are different.
The host's napkin is usually folded into a cylindrical shape and inserted into the cup.
The host's napkin is folded into a fan shape.
The napkin in its position is generally folded in three into a petal shape.
The layout of the entire napkin is a bit like a phoenix spreading its wings.
Once these two positions are decided, the other positions will be determined.
The one sitting to the right of the host is the "honor guest", and the one to the left is the "secondary guest"; the host sits on both sides, and the right is on top, which is also more important. It is best not to make this mistake when eating together.
Guests and hosts can sit anywhere in the rest of the seats. The banquet table jokingly calls these people "no three no four" because there are no terms such as "three guests" or "four companions" on the banquet table.
The guests and hosts sat down and started pouring wine.
Shandong people like to drink, especially in large bowls.
This seems to have the legacy of Liangshan heroes.
Nowadays, although there is no need for big bowls, there is no need for small cups.
If you see people from Shandong drinking in movies or TV series using those three-dollar wine cups, that’s pure nonsense.
The current standard cup in Shandong is a three-by-three tall glass (it is impossible to verify who first popularized this kind of cup, but a bottle of white wine can be poured into three glasses).
The wine is usually white wine, with an alcohol content of about 38 degrees (Shandong people don’t like to drink high-alcohol wine).
Of course you can also drink beer, but generally the ratio of liquor to beer is 1:6.
After sitting down, each person first fills up such a cup, which is called the door cup.
It means that you can clean up the snow on your own.
This glass of wine is a must for everyone present. Not drinking it would be disrespectful to the host or host.
Of course, the host must lead everyone to drink this first glass of wine.
The host usually has to make an opening statement, be polite, and then set standards.
That is to say, this glass of wine should be drunk in several times.
Usually 6 times, called "Liu Qi".
The meaning of "qi" includes the meaning of "development", which is auspicious.
In this way, everyone drinks, eats and talks under the leadership of the host.
This kind of wine usually does not involve clinking glasses. People in Shandong call it "it doesn't matter if you clink glasses and drink it."
But when toasting, you can click on the table to call it "power over".
You can often hear the sound of wine glasses hitting the table in restaurants.
The wine table is jokingly called "the beggar's gang meeting".
After the host leads everyone to drink the cup, it is the host's turn to speak.
He was also polite and led everyone to have a glass of wine.
Under normal circumstances, two glasses of wine will consume more than half a catty, and the host and guest will be red-faced and have clouds rising at their feet.
At this time, the host announced that the ceremony was over and everyone could move freely.
Please note that this free activity does not really allow you to go out and sober up, but you can drink alone with anyone, and you can drink as much or as little as you want without any restrictions.
Generally, at this time, the guests want to express their gratitude to the host for their hospitality. Generally, the first round is between the guest of honor and the host, the second guest and the host's companion, and so on.
During this period, the atmosphere at the wine table is the most lively, and the relationship between the guest and host can suddenly become much closer.
But this is often the time when I have a headache.
Because at this time, half a catty of liquor has been consumed, and there are many ways to persuade people to drink, it is especially easy to get drunk.
For example, there is a bottle-catching game in which people fight over wine during banquets, which I hate deeply.
It means that each player in the competition has a bundle of beer (10 bottles), and one bottle is placed in the middle of the table.
No contestant can touch the bottle in the middle of the table until he has finished his own bundle of beer.
When your beer is finished, the one who grabs the beer in the middle first and drinks it is considered the winner.
The old fox has only played this way 3 times, with 2 wins and 1 loss.
Not to mention how uncomfortable it was the next day.
There are also drinking days, that is, there are 12 months in a year. You must name a memorable day, otherwise you have to drink, and you can tell others to drink.
People often start talking nonsense before October is even mentioned.
Generally, when Shandong people treat guests, there must be fish on the wine table.
Fish is considered a "big dish" in Shandong and is called a "big item" on the wine table.
Regardless of the delicacies, they can only be called "side dishes" compared with fish.
It’s not that Shandong people are rare in fish, it’s mainly for good luck and “more than enough every year”.
Generally, when serving fish, the fish head is pointed at the guest to show respect for the guest.
At this time, the guests drink fish head wine, and those in the tail direction drink fish tail wine, usually "three at the head and four at the tail", and then everyone eats fish together.
The remaining fish bones are usually not removed until the host asks them to take them away and then use the remaining fish bones to make soup. This is actually saying that the banquet is almost over and it is time to end.
The soup made from fish bones is called "miscellaneous fish soup", which is to add fish bones and minced fish meat to soup, add pepper and vinegar and then stew it. It tastes very delicious.
Friends who have never drunk it can make it themselves and try it. It is delicious and not wasteful.
