Red and green silk, also called green silk and rose silk, is commonly used as food fillings for glutinous rice balls, moon cakes, cakes, etc. Its processing raw materials are orange peel, radish peel, etc.
preparation materials:
common flour, invert syrup, peanut oil, oyster sauce, peanut kernel, walnut kernel, almond, black sesame, white sesame, crushed rock sugar, cranberry, raisin, glutinous rice flour, peanut oil, honey, cold boiled water, white wine and egg liquid
Practice:
1. Mix invert syrup and peanut oil. Knead the smooth dough and put it in a fresh-keeping bag for 2 to 3 hours at room temperature
5. When the dough is proofed, the stuffing is prepared. Peanuts, walnuts and almonds should be baked in the oven, cooled and peeled, and cut into pieces with a knife, not too big, otherwise the foreskin will be broken when wrapped. Put glutinous rice flour in a non-stick pan and stir-fry until it turns yellow and cool for later use, and rock sugar will be broken into pieces.
6. Put all the ingredients into a large bowl, add water, honey and white wine, put on gloves and mix well. The amount of water and glutinous rice flour can be increased or decreased by yourself.
7. Cover the mixed stuffing with plastic wrap and let it stand for about half an hour, so long as it doesn't leak oil and disperse.
8. Weigh and knead the stuffing and skin respectively. I use a 63g mold with 25g of skin and 38g of stuffing. If I like thin skin, I can wrap it with 2g of skin and 43g of stuffing.
9. Take a dough and flatten it with the palm of your hand, and put a filling
1. Push it up slowly with a tiger's mouth
11. Knead it evenly
12. Sprinkle some flour on both the dough and the mold for demoulding
13. Spray some water on the prepared moon cake and put it in a preheated oven for 5 minutes to shape
