How to make cold dishes: 1. Choose a handful of yuba and put it into a large bowl, then pour in warm water to soak the yuba until soft.
2. Prepare another bowl, put a handful of fungus in it, add two tablespoons of sugar, and then pour some more warm water to soak the fungus. The added sugar can speed up the soaking of the fungus.
3. Prepare another cucumber, remove the head and tail, and then pat it with a knife so that the cucumber can be easily flavored. Then cut it into small pieces with a knife, and put it on a plate after cutting.
4. Prepare another half piece of tofu skin, cut it into thin strips with a knife, try to cut it evenly, then spread it with your hands, cut it and put it on a plate for later use.
5. Prepare another handful of coriander and cut it into small pieces. After cutting, put it into a bowl and set aside.
6. Next, prepare a few cloves of garlic and cut them into thin slices, then chop them into fine minced garlic, chop them and put them in a bowl for later use.
7. Prepare a handful of green onions, cut into chopped green onions, and a few small peppers cut into small rings. Put them into a bowl and add a spoonful of chili powder.
8. Add another spoonful of white sesame seeds, pour hot oil over it to stimulate the aroma, and then stir evenly with chopsticks.
9. Mix all the ingredients together, stir well and set aside.
10. Now that our yuba has been soaked, pick up the yuba and rinse it, then cut it into 6 cm long sections with a knife. After cutting, put it in a bowl and set aside.
11. Now the fungus is soaked and all are chubby. Then simply wash it to remove the dust and impurities on it. After washing, put it in a bowl and set aside.
12. Next, boil water in the pot in advance. After the water boils, add the fungus and yuba, blanch the fungus and yuba until cooked, about 30 seconds.
13. After cooking, take it out and put it in cold water for a while. Then use a slotted spoon to remove the water from the cold water. Squeeze out the water with your hands and put it into a bowl.
14. Then pour in the cut cucumber, tofu skin, seasoning and sauce.
15. Then add 2 tablespoons of salt to the bowl, add 2 tablespoons of sugar for freshness, then add 3 tablespoons of light soy sauce, 2 tablespoons of balsamic vinegar, and 1 tablespoon of sesame sesame oil for flavor, then mix evenly with your hands, and mix well before adding in the flavor.
