As a southern girl, if you ask me what is the most memorable thing in Xi'an, I won't hesitate to tell you it's the meat sandwich!
There are three kinds of meat steamed buns - preserved meat steamed buns, old Tongguan meat steamed buns, and beef and mutton steamed buns. The difference between the first two lies in the bun; the bologna meat bun is baked and tough, especially reflecting the aroma and rugged flavor of the noodles.
Tongguan meat sandwich is although baked, but added to the shortening, so it is a bit like a silvery cake, crispy.
The difference between the beef and mutton sandwiches and the first two is mainly in the filling. Beef and mutton filling is relatively non-fatty and less juicy, as opposed to pork meat sandwich will be more oily. Fish sauce recommended a few well-known meat sandwich store to everyone, are superbly praised store!
First is Wei Jia Liang Pi. As the first meat sandwich store I ate in Xi'an, I was super impressed with him. Their meat buns are golden and crispy on the bottom, and the crunching sound when you bite into it makes for a very addictive texture. It's slightly more fatty and less meaty, but the overall taste is still quite good. Also popular are their cold skin and rice noodles, which are tasty and refreshing, making them a good choice for another try.
Then there's Zhang Ji Pork Buns on Zi Wu Road. I've been there twice to try their meat buns, and this store is super crowded as many locals open it. They use bak kut teh buns, which are solid and dry and flavorful, and the meat has a good texture, but for me the meat is slightly salty and needs to be eaten with soup to be just right, but their noodles and soup are still quite tasty, so give it a try. The leaner ones are 13r and the regular ones are 12r, which is a bit more expensive in the old store. If you want to try it, you can go to the one on Jiandong Road and eat there without waiting in line.
Another popular store is Qin Yu Meat Bun. Their meat buns are so popular that they can sell out around 1pm, so you need to watch your time. Although you need to queue up, their queue is quite fast. The prices are relatively affordable and they also use bak kut teh buns, which are crispy on the outside, soft on the inside and have a solid texture. The meat has just the right amount of flavor and doesn't feel greasy. I personally think this is the best meat sandwich I've ever had in Xi'an! I bought their sandwiched buns to take home, and I also bought their baiji buns to prepare my own sandwiched meat!
Other than that, there is also Shicheng bolognese meat sandwich. Their meat buns are characterized by very juicy meat, and you can feel the juice overflowing in every bite. The meat is stewed so softly that the fat and lean meat have been perfectly blended together. Each bite needs to suck the juice while biting and the flavor is really great. In addition, their lamb blood in vermicelli soup is also amazing and even more delicious with the meat sandwich.
Last but not least is Wang Kui's preserved meat bun (Wenyi Road store). Their meat buns are characterized by a very tasty bun, with that crunchy feeling that brings back memories and gives off the unique wheat flavor of the dough. The meat is flavorful without being too fatty, and the texture is definitely not overly rotten, giving it a really wonderful taste. Even though it was not as juicy as Shih Cheng, it was a different flavor. In addition, their cold noodles are also very tasty, try enjoying them with the ice peaks for a more refreshing and pleasant experience.
The meat bun is a food that only gourmets will love; it's not something you can fall in love with in one bite, but something that becomes more and more amazing the more you eat it. The crunchiness of the bun, the softness of the meat, the richness of the juices and the flavor of the meat are all incredible. Xi'an's meat buns are really worth trying!
