How to make pork bone braised noodles

Method:

(1) Soak kelp and fungus in advance.

(2) Stir the water, flour and salt. Use chopsticks to stir first, and when it is almost done, start using your hands. Knead in one direction so that the dough will be strong and not break.

(3) After kneading into a ball, place it on the chopping board with a basin and let it rest for 20 minutes.

(4) Knead the dough into a large strip, cut it into small pieces with a knife at intervals of two centimeters (I cut 18 pieces myself), and then flatten it with your hands. Grease each piece with oil and place on a plate. Cover with plastic wrap and let sit for 2 hours.

(5) When the 2 hours is almost up, cook the ribs in cold water. Keep skimming off the loose ends. Add some sliced ??scallions and 4 slices of ginger. Cook for about 2 minutes and remove the ribs.

(6) Put oil in another pot, stir-fry 4 slices of ginger and appropriate amount of green onions over low heat. After frying until fragrant, add the pork ribs.

(7) Pour in a tablespoon of cooking wine, a tablespoon of light soy sauce, 1/2 teaspoon of dark soy sauce, and an appropriate amount of five-spice powder. Add half of the water to the ribs, cover the pot and cook over low heat.

(8) After the ribs are stewed, pour them back into the first pot of soup, and add tofu soaking, shredded kelp, and fungus. After boiling, add appropriate amount of salt and oyster sauce according to your taste.

(9) Take a milk pot, pour water into it, and wait for the water to boil. Hold the resting stewed dough in your hands, flatten it with your palms and then gently stretch it out. Hold both sides with your hands while shaking it. If it feels too wide, just tear it from the middle and stretch it a little longer. It doesn't matter if it breaks.

(10) After the water boils, pour in the stretched dough. Generally, 4 pieces of dough are enough for one person. After cooking, pour it into an empty bowl, add the cooked ingredients, and you are ready to eat~
