2. Method/steps
1. Prepare the ingredients: soybean soy sauce, brown sugar, rock sugar, water, chives (knotted) , ginger slices, star anise, fennel, bay leaves, senna, cinnamon, grass fruit, cardamom, Sichuan peppercorns, and tangerine peel.
2. Pour water into the pot.
3. Pour in soy sauce.
4. Pour in brown sugar and rock sugar
5. Put onion knots and ginger slices into the pot.
6. Finally add all the spices.
7. After boiling over high heat, turn to low heat and simmer.
8. Simmer until the soup is thicker (not too thick) and is 2/3 or 1/2 of the original soup. Turn off the heat.
9. Filter out the residue, let it cool, put it into a glass bottle and seal it, put it in the refrigerator and keep it for later use.
