Ingredients: 500 grams of tofu, 2 pieces of stinky tofu.
Accessories: 50 grams of peanuts (fried), 20 grams of sesame seeds.
Seasoning: appropriate amount of salad oil, 15 grams of sesame paste, 15 grams of garlic chili sauce, 1 tablespoon of chili oil, 8 grams of cumin, appropriate amount of chili powder.
Method:
1. Cut the tofu into small cubes 1 to 1.5 cm thick (don’t cut it too thin, otherwise it will be too dry after frying).
2. If there is too much water in the cut tofu slices, it is best to place them flat on the cutting board to dry for a while.
3. Take a container and put two pieces of stinky tofu into it. It can be any brand. I used the specialty stinky tofu from Kedong, Northeast China. Each piece in the box is individually vacuum packed.
4. Add 3 to 4 spoons of warm water inside, crush and stir into stinky tofu juice.
5. Put the tofu cubes into a clean container, and pour the mixed stinky tofu juice into the tofu. I put the tofu cubes directly into the stinky tofu juice and mix well, but I have to be gentle when mixing so as not to break the tofu cubes.
6. Marinate the tofu cubes for 20 minutes before frying. The longer the marinating time, the stronger the flavor. You can marinate and store it in the refrigerator in a container with a sealing lid for a longer time.
7. Before frying the stinky tofu, adjust the sauce for the fried stinky tofu: 15 grams of sesame paste, 15 grams of garlic chili sauce, 1 tablespoon of chili oil, 15 grams of boxed or bottled stinky tofu Gram (half a piece) is put into a bowl, crush and mix well. If it is too dry, add an appropriate amount of warm water and stir into a thicker paste, then add chili oil and mix well into a thin paste.
