There is no fish scale on the surface of hairtail, but only a silver film formed by the degradation of fish scales. The main component is fat, so it is also called phospholipid, which is usually silvery white or grayish white. Most of the fat of hairtail is concentrated in this layer of phospholipids on the body surface, and it is rich in unsaturated fatty acids, lecithin, vitamin E and other ingredients, which has high nutritional value, good skin care, anti-aging and prevention of Alzheimer's disease, so it is generally not recommended to remove hairtail.
Treatment method of fresh hairtail
The silvery scales of fresh hairtail are especially beautiful, and because the silver and phosphorus on its surface are particularly greasy, it is not easy to handle them directly by hand, so it is best to clean them with gloves.
First, chop off the head and tail of hairtail, then use kitchen scissors to cut open hairtail's belly, remove internal organs and gills, remove the black film on the abdomen, rinse and cut off fins, and finally chop hairtail into appropriate sizes to start cooking.
Note: the greasy silver scales on the surface of hairtail are rich in unsaturated fatty acids and lecithin, which is good for human health, so don't scrape them off.
